Anthony Staltari shares his latest recipe.
Chicken Cacciatore
Serves: 4 Ready in: 60 minutes (15 mins prep - 45 minutes cooking time) |
| Ingredients: |
- 1kg Chicken drumsticks and thighs (skin removed)
- 1 onion - chopped
- 1 red capsicum - cut into 5mm strips
- 2 cloves garlic - crushed
- 800g good quality crushed tomatoes
- 3 tbsp tomato paste
- 1 tbsp fresh basil - torn into pieces
- 1 tspn salt
- 1/2 tspn cracked black pepper
- 1 cup of red wine (optional)
- 2 tbsp olive oil

| Method: |
- Heat oil in a large saucepan, add onions and garlic, and cook until soft.
- Add capsicum strips and cook for 5 minutes.
- Add remaining ingredients and cook covered on medium heat for approximately 45 minutes, stirring occasionally.
- Add water if necessary.
- Serve with pasta and salad.
